Fresh basil from a local market gardener, olive oil from Provence, pine nuts, a pinch of cashew nuts: these ingredients are all you need to prepare an authentic and very tasty basil pistou. It’s all a question of ingredient quality.
Ideal as a sauce on both hot and cold pasta, in sandwiches and spreads, as well as, for example, a tomato and mozzarella salad or a zucchini tian.
There’s no need to add too much to your dishes: a tablespoon of this pistou, added to olive oil or cooking water, is more than enough to season a good pasta dish, for example.
