Provençal forest honey is harvested mainly in northern Vaucluse and Drôme. It is composed mainly of chestnut, oak, lime and bramble pollen. This gives it a different flavour from forest honeys harvested further north, composed mainly of pollen from fir and other conifers.
On tasting, it has a fine texture and a distinctive bitterness, albeit with a hint of sweetness.
This honey is made from pollen harvested by bees in an unspoilt, wild environment, far from any crops that might receive pesticides.
