A classic of Mediterranean gastronomy, and like all classics we tasted a whole host of them before settling on this one. Eggplant is very subtle when cooked, so it’s not easy to find caviar with a lot of flavor, but we weren’t disappointed.
Delicious as an aperitif on grilled toast, or as a garnish for a Greek sandwich with feta cheese.
