Did you know about Saussoun?
This is undoubtedly one of the oldest Provencal recipes, (later dethroned by tapenade) lou Saussoun, pronounced saossoun, is a Var preparation made with almonds and anchovies.
In the past, this preparation was called “poor man’s sauce” in Provence. It was said that simply placed on a piece of bread, it made a whole meal.
We only recently discovered this off-the-beaten-track ancestral speciality at an artisan’s shop in the foothills of Mont Ventoux, and we’ve come to appreciate its sunny, full-bodied flavour. An authentic Provencal product that’s unfairly overlooked!
Simply enjoy with bread as an aperitif or as a garnish for your dishes.
Ingredients: Almond powder 36%, water, anchovies 18%, olive oil, salt, vinegar, lemon juice.
Capacity: 90g
